La Chablisienne – specialist in Chablis from Burgundy

La Chablisienne is one of the most famous wine producers of Chablis, in the north of Burgundy. What is special about La Chablisienne is that it is not a classic winery with one large vineyard of its own, but a cooperative of winegrowers. Since its establishment in 1923, local winegrowers have been working together to best express the character of Chablis.

Today, La Chablisienne is one of the most important producers of Chablis and makes wines from various appellations, from simple Petit Chablis to prestigious Chablis Premier Cru and Grand Cru.

Chablis and Chardonnay

Chablis is known worldwide for its fresh, mineral white wines made from 100% Chardonnay. The northern climate of Burgundy provides relatively cool conditions, allowing the grapes to ripen slowly and retain their natural acidity.

One of the most important characteristics of Chablis is its unique soils. In many vineyards, you will find Kimmeridgian, a calcareous soil with fossilized remains of small marine animals. This soil contributes to the characteristic minerality and tension that is so typical of good Chablis.

The power of cooperation

La Chablisienne works with hundreds of winegrowers who manage their vineyards spread across the Chablis region. As a result, the cooperative has access to grapes from a large number of different plots and terroirs.

The winemakers of La Chablisienne can then process these grapes separately and bring together different qualities and styles. This creates a wide range in which the differences between the various appellations are clearly expressed.

From Petit Chablis to Grand Cru

The La Chablisienne range includes different levels within the Chablis appellation:

Petit Chablis – fresh, light and approachable.

Chablis – mineral, crisp and characteristic.

Chablis Premier Cru – more concentration, complexity and length.

Chablis Grand Cru – the absolute pinnacle of the appellation, originating from the seven Grand Cru climats around Chablis.

Although all wines are made from the same grape, differences in soil, location and maturation can result in strikingly different wine styles.

Winemaking with respect for terroir

La Chablisienne combines the traditional knowledge of local winegrowers with modern winemaking techniques. The goal is not to create a heavy oak character, but to preserve the freshness, minerality and elegance of Chardonnay from Chablis.

Depending on the wine, different maturation methods are used, including stainless steel tanks and wooden barrels. The winemakers are always looking for the right balance between fruit, acidity, minerality and complexity.

Fun fact

Chablis is made from one grape variety: Chardonnay. Yet a Chablis can taste very different from a Chardonnay from, for example, California or Australia. The cool climate and calcareous soils of Chablis create a much fresher, mineral style. That is why Chablis is often seen as one of the finest examples of terroir-driven Chardonnay.
