Tasting Note La Chablisienne Les Vénérables
The aroma offers floral notes (white orchid) and a slight, subtle spiciness from the wood. The taste is complex with ripe fruit and mineral elements. The freshness in the wine will increase as the bottle is open longer. The finish is exceptionally long. Light yellow in color with a crystal-clear shimmer. Drink this La Chablisienne Les Vénérables at a temperature of 8-10°C. A classic!
Wine & Food
La Chablisienne Les Vénérables is ideal with grilled fish, a platter of seafood, white meat, and of course the classic combination with oysters, perhaps au gratin in this case.
Additional information
La Chablisienne is not only one of France's best cooperatives, it is also the calling card for wines from Chablis and the surrounding area. In 1996, this was confirmed by the authoritative magazine "La Revue des Vins de France" through its selection as the best cave cooperative in France.
The company alone accounts for approximately 30% of the total production and combines that with a range of impeccable quality, whether it concerns a simple Petit Chablis or a prestigious Grand Cru. Although La Chablisienne is today one of the most successful and leading companies in all of France, the company was born out of pure poverty, when in 1923 a group of 180 small farmers joined together to form a cooperative. In 1947, a merger with another cooperative in Chablis took place.
Today, La Chablisienne has 300 members with 1130 hectares of vineyards. Pearls in the crown are the six Grands Crus, in addition to over 30 Premiers Crus. Vinification and aging of the individual wines are custom-made, for example regarding the use of oak barrels. All of this results in classic Chablis with optimal expression of terroir influences.
The wines are represented on many wine lists of leading hospitality establishments around the world! High-level classic Chablis that continues to develop positively in the bottle for a very long time. The Chardonnay grapes for this wine come from vines averaging 35 years old.
