Complex aroma of ripe fruits such as plums, cherries, blackberries, and raspberries, also featuring candied, almost jammy notes, interspersed with a sultry hint of dark chocolate. On the palate, this Italian red wine is full and powerful, with a warm, supple texture and finely integrated acidity, followed by an impressively long, soft finish where the rich fruit lingers.

Torre del Falasco Apasio calls for dishes with character: think grilled red meat such as a grilled sirloin or a succulent venison steak with a rich, slightly sweet sauce. Game dishes also pair excellently with this wine, and its sultry fruitiness makes it surprisingly delicious in combination with meat dishes that have a sweet accent, such as rabbit with plum sauce. Finally, a well-composed cheese board with mature, powerful cheeses is also an excellent pairing.

Unlike lighter Valpolicella wines, this wine undergoes partial appassimento (the drying process), where selected grapes are briefly dried after harvest to lose moisture. This concentrates the aromas and sugars, leading to the rich, almost candied fruit aromas you smell in the glass.
After manual harvesting, the grapes are carefully selected and fermented at controlled temperatures to allow the full aromas of ripe fruit and spices to develop well. The wine then often matures in oak barrels, which adds extra complexity, softer tannins, and a warm, supple structure to the final blend.
The Cantina Valpantena Torre del Falasco Apasio comes from the heart of the Valpantena valley in the Italian Veneto region, near Verona. The name Valpantena means "valley of all gods" in ancient Greek, and that rich tradition is reflected in the wines made here. Cantina Valpantena is a strong cooperative that has existed since 1958 and unites dozens of winemakers from the region.
