Tasting Notes OddBird Blanc de Blancs 0.2 liters
An elegant, dry, and refined non-alcoholic sparkling wine from the Languedoc-Roussillon in Southern France. The aroma and taste reveal fresh Granny Smith apple, lime, and lemon zest, with subtle notes of honey and almond. The fine mousse, crisp acidity, and slight creaminess create a beautiful balance. The finish is clean, fresh, and elegant. A surprisingly mature style for a non-alcoholic sparkling wine.
Wine & Food Pairing
Delicious as an aperitif and, of course, perfect for a festive occasion. Also pairs well with shellfish, sushi, ceviche, light fish dishes, salads, and goat cheese.
Additional Information
The wine comes from the Languedoc-Roussillon, one of France's oldest wine regions. The vineyards benefit from abundant sunshine, while the Tramontane, a well-known regional wind, provides cooling. This helps preserve the freshness in the grapes.
The current Blanc de Blancs is made from Chardonnay and Colombard. Chardonnay provides structure, citrus, and freshness, while Colombard adds extra fruity and floral aromas.
The long aging process is notable: the base wine ages for approximately 12 months on fine lees. This gives the wine more texture and complexity. Only then is the alcohol gently removed via low-temperature vacuum distillation, with Oddbird striving to preserve the original aromas and structure as much as possible.
Oddbird was founded in 2013 in Gothenburg, Sweden, by Moa Gürbüzer. Moa worked for over twenty years as a social worker and family therapist and witnessed firsthand the many problems alcohol can cause within families. From that experience, her idea arose not only to help people already struggling with alcohol problems but also to change the way we view alcohol.
Her vision was actually very simple: the question "Do you want your wine with or without alcohol?" should be as normal as asking if you want coffee with or without milk. Oddbird was born from this idea.

Fun Fact
Oddbird allows this wine to age for no less than 12 months on its fine lees before the alcohol is removed. This first creates a full-fledged wine with more complexity and texture. Only then does de-alcoholization follow. Oddbird essentially makes the wine first and then removes the alcohol, rather than the other way around.
