Tasting Note OddBird Blanc de Blancs

An elegant, dry, and refined non-alcoholic sparkling wine from the Languedoc-Roussillon in Southern France. The nose and palate feature fresh Granny Smith apple, lime, and lemon zest, with subtle notes of honey and almond. The fine mousse, crisp acidity, and light creaminess create a beautiful balance. The finish is crisp, fresh, and elegant. A surprisingly mature style for a non-alcoholic sparkling wine.

Food Pairing

Delicious as an aperitif and, of course, perfect for a festive moment. Also pairs well with shellfish, sushi, ceviche, light fish dishes, salads, and goat cheese.

Additional information

The wine originates from the Languedoc-Roussillon, one of France's oldest wine regions. The vineyards benefit from plenty of sun, while the Tramontane, a well-known regional wind, provides cooling. This helps to maintain freshness in the grapes.

This Blanc de Blancs is made from Chardonnay and Colombard. Chardonnay provides structure, citrus, and freshness, while Colombard adds extra fruity and floral aromas.

The long maturation process is notable: the base wine is aged for approximately 12 months on the fine lees. This gives the wine more texture and complexity. Only then is the alcohol carefully removed via low-temperature vacuum distillation, with Oddbird aiming to preserve the original aromas and structure as much as possible.

Oddbird was founded in 2013 in Gothenburg, Sweden, by Moa Gürbüzer. Moa worked for over twenty years as a social worker and family therapist and saw firsthand how much trouble alcohol can cause within families. From that experience, her idea arose to not only help people already dealing with alcohol issues but also to change the way we view alcohol.

Her vision was actually quite simple: the question "Would you like your wine with or without alcohol?" should be just as normal as asking whether you want your coffee with or without milk. That thought led to the creation of Oddbird.

Fun fact

Oddbird allows this wine to age for no less than 12 months on the fine lees before the alcohol is removed. This first creates a fully developed wine with more complexity and texture. Only then does the de-alcoholization follow. Essentially, Oddbird makes the wine first and then removes the alcohol, rather than the other way around.
