Tasting note Luigi Baudana Dragon Langhe Bianco
A fresh, characterful white wine from Serralunga d’Alba, made from a unique field blend of Chardonnay, Sauvignon Blanc, Nascetta, and Riesling. The grapes grow side by side in the same vineyard and are harvested and processed together.
The nose reveals white flowers, acacia and hawthorn, citrus, tropical fruit, and a hint of mint. On the palate, the wine is lively and juicy, with fresh acidity, beautiful minerality, and a long, flavorful finish. As the wine opens up, notes of lime, apricot, green apple, and flint emerge.
Food Pairing
Due to its freshness and minerality, this wine is very versatile. It is delicious with grilled fish with lemon or dishes featuring green herbs.
Additional information
What makes this wine special is that the four grape varieties are literally interplanted in the same vineyard. This is not a traditional blend where each grape is vinified separately and combined later. Chardonnay, Sauvignon Blanc, Nascetta, and Riesling are harvested together and then processed collectively.
The grapes are gently pressed as whole bunches, with minimal skin contact. This is followed by a slow fermentation at a low temperature. The wine does not undergo malolactic fermentation, ensuring the natural freshness and tension are preserved.
The Dragon is thus a fine example of the idiosyncratic style of Luigi Baudana: a white wine from Serralunga d’Alba, an area naturally most famous for its Nebbiolo and Barolo.

Fun fact
The dragon on the label is not a random design. The Dragon represents courage and was the last drawing by artist Gianni Gallo. He created the dragon as a wish for the Vaira family in their new adventure with Luigi Baudana.
