The taste is full-bodied and concentrated, yet beautifully balanced thanks to refined tannins and fresh acidity. The long, slightly peppery finish gives this Cahors extra character.

Additional Information
The Astrolabe Cahors Malbec is the premium cuvée from the producer Vinovalie, within the Astrolabe range. The wine is made from 100% Malbec, the classic grape of Cahors, sourced from old vines over 40 years old. The grapes come from different terroirs, including the terraces of the Lot Valley and the higher limestone plateau of the Causse.
The wine undergoes a relatively long maceration of about 25 days, after which it matures for no less than 18 months in new oak barrels. This explains the combination of power, concentration, and the notes of vanilla, cocoa, and spices.
In the glass, it is a very deep, almost black-purple wine. The producer mentions cassis and blueberry, as well as bergamot, pepper, vanilla, violets, cocoa, and licorice. On the palate, it is powerful yet fresh, with polished tannins and a long, slightly peppery finish.
Malbec and Cahors are actually old acquaintances. While Malbec is currently primarily associated with Argentina, Cahors is one of the historical homelands of the grape. In the region, Malbec is traditionally also called Côt.
Fun Fact
The name Astrolabe refers to the ancient instrument used by navigators to determine their position by the stars. Vinovalie uses the name as a metaphor for the search for the perfect balance between terroir, grape, and winemaker.
