Tasting Note Waterkloof Circumstance Cape Coral Mourvèdre Rosé
The aroma features delicate notes of pomegranate, raspberry, and red fruit, alongside subtle floral tones and a characteristic mineral, slightly saline, and flinty undertone. On the palate, the Cape Coral is dry, elegant, and remarkably refined, with a soft texture and fresh acidity. The red fruit is beautifully complemented by spicy and savory nuances. This gives the wine more depth and structure than its delicate color might suggest.
Wine & Food
This rosé is ideally suited for enjoying with food. Its dry style, fresh acidity, and savory, mineral notes pair excellently with sushi with tuna and soy sauce, as well as shellfish, grilled fish, light Asian dishes, and salads. The wine is also surprisingly delicious with dishes that have a bit more spice, such as grilled chicken or Mediterranean vegetables.

The Cape Coral is part of Waterkloof's Circumstance series. This range consists of wines where the specific conditions of the vineyard are central: soil, location, and altitude, among other factors, determine the wine's ultimate character.
Waterkloof is located on the slopes of the Helderberg, near Somerset West and not far from the Atlantic Ocean. The combination of altitude, sea breeze, and the relatively cool climate is particularly suitable for Mourvèdre, a slow-ripening grape. These conditions ensure that the grapes retain their freshness while developing sufficient ripeness and flavor.
The winemaking process is also deliberately focused on finesse. The grapes are gently pressed as whole bunches, after which spontaneous fermentation takes place in large, used wooden barrels. Fun Fact
The name Cape Coral refers to the beautiful salmon to coral-like color of the rosé. And there's a nice contrast in this wine: although it looks very light and delicate, it is a 100% Mourvèdre with considerable gastronomic depth. Waterkloof therefore deliberately calls it a rosé that challenges the traditional image of a simple summer wine.
