Tasting Notes Pouilly-Fumé "Kimeride"
Pale gold in color with a sparkling sheen. The nose is extremely complex and pure, with layered aromas of gooseberry, white peach, lime, and passionfruit, accompanied by the characteristic flinty-mineral note. On the palate, it displays a fantastic balance between juicy citrus, ripe stone fruits, and a taut, flinty acidity. The finish is remarkably long, smoky, dry, and refined chalky.
Wine & Food Pairing
Due to its smoky minerality and fresh acidity, this is a classic gastronomic white wine. It is best enjoyed with oysters, fresh seafood, grilled sea bass, and swordfish. It is also a perfect match for French classics such as veal in white sauce (blanquette de veau), chicken dishes with chervil, and, of course, ripe goat cheeses from the Loire like Crottin de Chavignol.

Domaine Jean Pabiot et Fils (Domaine des Fines Caillottes) is an established name in the French Loire Valley, located in Pouilly-sur-Loire. The fifth generation of the Pabiot family now runs the more than 30 hectares of vineyards. The domain practices sustainable viticulture according to Terra Vitis certification and is known for its precision and respect for the diversity of local soil types.
The name "Kiméride" refers directly to the unique Kimmeridgian soil (a calcareous marl soil with fossil oyster shells) on which the old Sauvignon Blanc vines are planted. The grapes are hand-picked and undergo a short skin maceration. After temperature-controlled fermentation in stainless steel tanks, the wine matures for 6 to 8 months on its fine lees with regular bâtonnage, which provides extra creaminess and depth without the use of oak.
