Tasting Notes Off The Record Ceres Plateau Syrah
The wine has an exuberant aroma of pepper, black fruit, leather, blueberries, and cassis. On the palate, the wine has notes of cocoa, chocolate, and vanilla, but not excessively so, as the wine has matured in old oak barrels.
Wine & Food Pairing
Off the Record Syrah is delicious with a braai, or barbecue. The wine's smoky aroma pairs excellently with côte de boeuf, entrecote, lamb, bavette, picanha, and beef tenderloin that have been slow-cooked, among other dishes. Also a great combination with hard cheeses.
Other Information
The wine has a lot of power because the entire grape cluster, including the stems, was fermented. This gives the wine a beautiful tannin structure. The wine then matured for 10 months in 4th-year oak, which prevents the wood flavor from being too prominent in the wine.
Ceres is located approximately 180 kilometers north of Cape Town in South Africa. It is a relatively warm and inhospitable area. The grapevines for this wine are therefore located at an altitude of over 1000 meters.
