Tasting note Montes Outer Limits Sauvignon Blanc
An elegant and distinctive Sauvignon Blanc from Zapallar on the Chilean coast. The nose is immediately filled with passion fruit, lime, and grapefruit, with a subtle green hint of asparagus in the background.
On the palate, the wine is dry, fresh, and crisp, with lively acidity and a light body. The long, fresh finish and mineral character give the wine great tension. Its cool-climate origin is clearly recognizable: this is a Sauvignon Blanc with plenty of freshness and energy.
Food pairing
Delicious as an aperitif, but especially lovely with oysters, shellfish, ceviche, carpaccio, and goat cheese. It is also an excellent pairing for light fish dishes and summer salads.
Other information
The Montes Outer Limits series is intended as a journey of discovery through Chile's more extreme terroirs. For this Sauvignon Blanc, Montes has chosen Zapallar, on the coast of the Aconcagua region.
The vineyards benefit greatly from the proximity of the Pacific Ocean. Cool sea breezes and ocean fog ensure a slow ripening of the grapes. As a result, they retain their natural acidity and aromatic freshness. Montes describes the wine as a typical expression of a cool climate.
The grapes are harvested by hand early in the morning and transported to the winery under cooling. After careful selection, a short cold maceration follows. The juice is then fermented at a low temperature.
The current style of the wine is made without oak aging. This keeps the fresh acidity, citrus fruit, and aromatic properties of Sauvignon Blanc completely at the forefront. After fermentation, the wine is aged on the fine lees before being bottled.

Fun fact
The name Outer Limits refers to Montes' search for vineyards in places where viticulture is literally pushed to the limits. For this Sauvignon Blanc, that is the coast of Zapallar, where the cooling influence of the Pacific Ocean plays a decisive role.
