Tasting Notes Larue Bourgogne Aligoté
Pale yellow in color with aromas of citrus, green apple, white flowers, and a subtle mineral touch. The taste is fresh, lively, and clean, with a beautiful balance between ripe fruit, refined acidity, and an elegant, slightly salty finish. A classic Bourgogne Aligoté with great finesse.
Food & Wine Pairing
Larue Bourgogne Aligoté is a wonderful accompaniment to oysters, mussels, shrimp, and other crustaceans and shellfish. It also pairs excellently with goat cheese, sushi, light salads, asparagus, and grilled white fish. Thanks to its fresh acidity, it is also an ideal companion for dishes with a creamy sauce.
Additional Information
The Larue Bourgogne Aligoté is a fresh and refined white Burgundy from Domaine Larue in Saint-Aubin, in the heart of the Côte de Beaune. The wine comes from old Aligoté vineyards on calcareous and marly soils. Thanks to careful vinification and aging on the fine lees, an elegant wine with great freshness, minerality, and a surprisingly long finish is created.
In addition to many Saint-Aubin wines, Domaine Larue also produces wines from Chassagne and Puligny-Montrachet, appellations that are more evocative because the world's best white wines are made there. The family has owned vineyards for several generations.
The grapes are harvested by hand and gently pressed. Fermentation takes place at low temperatures in stainless steel tanks, after which the wine ages for approximately ten months on the fine lees. This preserves its lively freshness and at the same time gives it extra structure and complexity.
Fun Fact
Aligoté was formerly the most widely planted white grape in Burgundy. Today, Chardonnay is much more in the spotlight, but thanks to top estates like Larue, Aligoté is experiencing a true renaissance. The best Aligoté wines are fresh, mineral, and gastronomic and are an excellent alternative to Chardonnay.
