Wine & Food
Delicious as an aperitif, but also an excellent accompaniment to shellfish, sushi, grilled fish, salads, goat cheese, and light Asian dishes. Also lovely with a summer drink or lunch.
Other Information
The wine comes from Jordan Wine Estate in Stellenbosch, South Africa. The Sauvignon Blanc comes from east and south-facing slopes at 220 to 380 meters altitude, with soils of weathered granite and loam. The vines are on average a remarkable 42 years old, which contributes to the concentration and complexity of the grapes.
The grapes are harvested at different stages of ripeness. This creates a beautiful combination of fruit intensity and freshness. After a short skin maceration, the wine is gently pressed and fermented at controlled low temperatures. It then matures on its fine lees for about three months before the different components are blended and bottled.
The Jordan winery is the only winery in Stellenbosch that owns vineyards planted in every direction. They own no less than 164 hectares in this beautiful wine region. The vineyards are located at an altitude of 160 to 410 meters and benefit from the cooling influences of the Indian and Atlantic Oceans. The soil consists of old granite with various top layers, ranging from clay-loam to sand and gravel. In winemaking, innovative methods are combined with a natural approach.
Fun fact
The name Chameleon is inspired by the Cape dwarf chameleon (Verkleurmannetjie in Afrikaans), which occurs on the Jordan estate. The winery's gardens form an important habitat for this special chameleon. Jordan also uses the sales of Chameleon wines to support research and conservation efforts for this species.
