The Jordan Chameleon Cabernet Sauvignon/Merlot is a smooth and characterful red wine from Stellenbosch. The aroma reveals cassis, ripe plums, and dark fruit, with a subtle spicy hint of mint. The taste is rich and juicy, with ripe black fruit, soft tannins, and pleasant oak notes. A powerful wine, yet beautifully approachable thanks to its rounded structure and fresh undertones.
Wine & Food Pairing
Excellent with grilled and pan-fried red meat, hamburgers, lamb, and stews. This blend also pairs well with pasta with a robust tomato sauce, mushrooms, or aged cheeses.
Additional Information
The wine originates from Jordan Wine Estate in Stellenbosch. The grapes grow on north and east-facing slopes with soils of weathered granite and loam. The vineyards are located at various altitudes and benefit from cooling influences, ensuring the grapes retain sufficient freshness.
The different grapes are processed separately. The Cabernet Sauvignon and Merlot undergo malolactic fermentation in oak barrels. Subsequently, the various components mature for approximately 18 months in oak barrels, after which the final blend is composed.
Jordan also calls this wine the "Baby Cobblers Hill" because its style is reminiscent of the prestigious estate blend Cobblers Hill.
The Jordan Winery is the only winery in Stellenbosch that owns vineyards planted in every compass direction. They own no less than 164 hectares in this beautiful wine region. The vineyards are located at an altitude of 160 to 410 meters and benefit from the cooling influences of the Indian and Atlantic Oceans.
Fun Fact
The name Chameleon is inspired by the Cape Dwarf Chameleon (Verkleurmannetjie in Afrikaans), which is found on the Jordan estate. The winery's gardens provide an important habitat for this special chameleon. Jordan also uses the sale of its Chameleon wines to support research and conservation efforts for this species.
