The grapes are hand-harvested from low-lying vineyards near the Atlantic Ocean, where the sea breeze ensures slow ripening and excellent acidity. In the cellar, the wine is vinified naturally and carefully: part of the juice ferments spontaneously with wild yeasts, after which the wine ages for at least six months on the lees (fine yeast cells) to develop extra depth and texture. No oak barrels are used, so that the pure, fresh Sauvignon expression is preserved.
The result is a bright, crisp white wine with a characteristic bouquet of freshly cut grass, lime, gooseberries, and mineral notes, complemented by subtle hints of indigenous fynbos herbs. The taste remains fresh and elegant, with lively acidity and a clean, refreshing finish.
Waterkloof has a whole "zoo" working on the vines, and the "green team" consists of horses used instead of tractors for plowing, composting, spraying, and harvesting. Cattle provide manure for biodynamic preparations and compost. Sheep graze in the vineyards, eating weeds and enriching the soil with nitrogen and potassium from their manure. Chickens roam freely among the vines, eating weevils and laying fresh eggs for use in the luxurious restaurant of the fully regenerative estate.
