Tasting Notes False Bay Slow Chenin Blanc
Mineral aroma with elements of apricot, apple, fennel, anise, and melon. Ripe taste of apple, pear, lime, juicy, full, and creamy. Light yellow color with a green hue. The finish has great structure and length. Surprisingly good value for money!

The wines are made at the Waterkloof Estate. In 2004, Paul Boutinot acquired this magnificent wine estate. Waterkloof is located on the Schaapenberg in Somerset West, Stellenbosch, South Africa, just three kilometers from the ocean. The vineyards for the Waterkloof wines are situated on the upper slopes of this estate, 300 meters above sea level. They are characterized by their mineral character and elegant style. The estate operates fully biodynamically.
This Chenin Blanc is made from old vines that yield concentrated fruit. No yeast is added, which allows for slow fermentation and gives the wine a complex character. Due to the organic working method, the winemaker opts for a natural and wild fermentation. This results in a slower but finer fermentation process, yielding more elegant wines.
Waterkloof has an entire menagerie working in the vineyards, and the green team consists of horses used instead of tractors for ploughing, composting, spraying, and harvesting. Cattle provide manure for biodynamic preparations and compost. Sheep graze in the vineyards, eating weeds and enriching the soil with nitrogen and potassium from their manure. Chickens roam freely among the vines, eating weevils and laying fresh eggs for use in the luxury restaurant of the fully regenerative estate.
