Tasting Notes Dominio Del Soto Crianza Blanco
Clear, light golden color. On the nose, you'll find a complex aroma of ripe stone fruit like pear and apricot, fresh citrus accents and light floral nuances, complemented by subtle buttery tones and a hint of smokiness from the oak aging. On the palate, it is round and full-bodied, with a beautiful balance between freshness and texture, and an elegant, slightly salty and aromatic finish that lingers long.
Wine & Food Pairing
Dominio del Soto Crianza Blanco pairs beautifully with refined dishes that offer richness and structure. The wine combines wonderfully with grilled or baked fish, especially when served with a light butter sauce or a creamy citrus touch. Shellfish such as scallops or large prawns also pair well, as the wine's full texture remains in good balance with the fresh acidity. Additionally, this is an excellent accompaniment to risottos with mushrooms or saffron, and white meats such as chicken or turkey in a creamy sauce.
Additional Information
The Dominio del Soto Crianza Blanco comes from the Ribera del Duero in northern Spain, a region primarily known for its powerful red wines but also produces exceptional white wines.
The Dominio del Soto estate was founded in 2005 in Sotillo de la Ribera, on high-altitude vineyards (approximately 850-900 m above sea level) with clay and limestone soils that give the grapes beautiful structure and freshness. The wine is produced under the creative direction of the Mathilde Chapoutier Sélection team, which aims to present the local grape in an elegant style and clearly let the terroir speak for itself.
For this crianza, the Albillo Mayor grapes (quite rare) are hand-harvested and gently pressed. The juice undergoes a short cold static clarification and then ferments slowly at a low temperature (±15 °C) with indigenous yeasts. After fermentation, the wine ages for more than 11 months on its lees in French oak barrels, which provides structure, complexity, and soft roundness, while the organic approach supports its freshness and depth.
