Tasting Notes Dominio Del Soto Blanco
In the glass, this Dominio del Soto Blanco shows a clear, golden color. The aroma is complex and inviting, with notes of pear, white flowers, and a subtle buttery hint, interspersed with light smoky tones that reveal its long aging. On the palate, the wine is soft and round in texture but maintains a beautiful freshness thanks to the large day-night temperature differences in the wine region. The finish is elegant with a slight saline and smoky flourish, emphasizing its complexity and providing a long, refined aftertaste.

Its combination of fruity elegance, creamy texture, and fresh acidity makes this wine an excellent match for refined dishes. The Dominio del Soto Blanco comes from the Ribera del Duero in Northern Spain, a region mainly known for its powerful red wines, but also producing exceptional white wines. The Dominio del Soto estate was founded in 2005 in Sotillo de la Ribera, on high-altitude vineyards (approximately 850-900 m above sea level) with clay and calcareous soils that give the grapes a beautiful structure and freshness. The wine is produced under the creative direction of the Mathilde Chapoutier Sélection team, which aims to present the local grape in an elegant style and clearly let the terroir speak.
This white wine is 100% Albillo Mayor, an indigenous Spanish grape that is relatively rarely used solo, thus gaining a unique expression. The grapes are hand-harvested and gently pressed with the stems, after which the juice is statically clarified. Subsequently, the wine is partially (70%) fermented in stainless steel tanks and 30% in large oak barrels, contributing to extra complexity without the oak influence dominating. No malolactic fermentation takes place, so the fresh acidity is well preserved. The wine then ages for about 12 months on its lees, which provides a rich mouthfeel and beautiful roundness in taste.
