Tasting note Castel Firmian Sauvignon Blanc
A fresh and aromatic Sauvignon Blanc from Trentino, with a pale yellow color and green reflections. The nose reveals typical Sauvignon notes of gooseberries, elderflower, green bell pepper, and a hint of tomato leaf. On the palate, the wine is fresh and lively, with a nice minerality and well-balanced acidity.
Food Pairing
Castel Firmian Sauvignon Blanc is delicious with grilled or smoked fish, shrimp, shellfish, asparagus, and salads. It is also very tasty with chicken or other white meat and semi-hard cheeses.
Additional information
The Sauvignon Blanc is grown on the mid-altitude hills of Trentino, along the Adige river. Here, the large temperature differences between day and night ensure the proper development of the grapes' acidity and aromatic character.
The grapes are hand-harvested and carefully selected. After a gentle pressing, a short skin-contact period follows, intended to preserve the characteristic aromas of Sauvignon Blanc as well as possible. Fermentation takes place under controlled temperatures.
Mezzacorona was one of the first cooperatives in Italy and now represents a large group of wine companies from the far north (Trentino) to the deep south (Sicily). The vineyards of winemaker Mezzocorona are located in Trentino and Alto Adige, the region between Verona and the Alps in Italy.
