Tasting Notes Castel Firmian Fildirose Pinot Grigio Rosé
The wine has a fresh and delicate aroma profile, with notes of red berries, strawberries, raspberries, and fruit with hints of citrus fruits such as pink grapefruit. The taste is characterized by a pleasant minerality with vibrant and refreshing acidity. A wonderfully fresh summer rosé with a kick. Beautiful soft pink color.
Wine & Food
This Castel Firmian Pinot Grigio rosé pairs well with antipasti, fish, and white meat dishes. Additionally, this rosé combines wonderfully with Italian prosciutto and coppa, grilled tuna with an anti-boise sauce, or grilled scampi. Of course, it can also be enjoyed simply on the terrace.

Many consumers always think that Pinot Grigio is a white grape, but it clearly has some red pigment in its skin. So, if you let those skins soak in the juice for a while, a beautiful pink hue always appears in the wine. This also gives the wine a little more character. Rosé wine from Pinot Grigio has been produced in Trentino since 1950.
The vineyards are located at an altitude of up to three thousand meters above sea level, which, in addition to many hours of sunshine, also brings sufficient coolness to the grapes. This freshness is important. If it weren't for this, the grapes would ripen too quickly. Due to this cooling, there is a consistent growing season.
When the winemaker is satisfied with the ripeness of the grapes, they are harvested in the early morning. The entire harvest is done manually for a strict selection of the quality of the grapes. After vinification, this delicious rosé matures for several months in the bottle in the cellars of Firmian.
Mezzacorona was one of the first cooperatives in Italy and today represents a large group of wineries from the far north (Trentino) to the deep south (Sicily). The vineyards of winemaker Mezzocorona are located in Trentino and Alto Adige, the region between Verona and the Alps in Italy.

Fun fact
The name Fildirose refers to an alpine rose garden. Mezzacorona describes the environment of the vineyards as a kind of "mountain garden" where wild roses grow and provide shelter for the fauna of the Dolomites. This is the inspiration behind the name Fildirose. 🌹🏔️
