Tasting Notes BIO Pizzolato Back to Basic Pinot Grigio
The aroma offers notes of almonds, walnuts, and peach. On the palate, it has a velvety texture with excellent acidity. This Pinot Grigio from Pizzolato is easy-drinking, making it suitable for various occasions. The complex aromas create a beautiful bouquet that invites the first sip. The fruity character is also present on the palate, with peach, apple, and citrus alternating and complemented by spicy notes. It has a beautiful pale straw-yellow color.
Wine & Food
Back to Basic Pinot Grigio is delightful as an aperitif, with salads, grilled zucchini, an omelet with fresh herbs, antipasti, shellfish, risotto, olives, and sushi.
Additional Information
You might think that Pizzolato only produces sparkling wines, but that's not the case at all! Of course, they also make a still Pinot Grigio, as they have plenty of vines for it! Organic, of course, but that goes without saying here! Sustainability is capitalized here and integrated throughout the entire company. For example, all their bottles are made from recycled glass.
The Pinot Grigio grapes are carefully and selectively harvested at optimal ripeness. In the winery, the pressed juice undergoes fermentation in steel tanks, focusing on extracting flavors and aromas. This is followed by alcoholic fermentation, after which the wine remains in contact with the yeasts for some time to extract even more aromas. This sur lie aging lasts several months and is only separated from the yeast after frequent testing. After the ideal period, the wine is bottled.
Brothers Ettimo and Gino Pizzolato lead the old family business Cantina Pizzolato. The company is known as an organically operating winery. Located just north of Treviso in Veneto, the company has been organically certified since 1991. 🌱
This means that no chemical agents are used, and instead, the power of nature is harnessed. For example, a good biological balance is maintained in the vineyard, and pests are controlled by natural enemies such as parasitic wasps and ladybugs. In winemaking, no sulfites are added, for instance. All for an honest and beautiful natural product.
