Tasting Notes BIO Lunaria Civitas Pecorino
Fresh, fruity, dry, and beautifully balanced. The nose has a characteristic aroma of dried green apples, ice bonbons, and a hint of herbal liqueur. This Lunaria Pecorino is also nicely spicy on the palate, yet juicy with a fresh, citrusy acidity.

Other Information
The grapes are harvested by hand and strictly selected. Only the best juice is good enough to end up in the bottle. The whole bunches are sent to the pneumatic press and the must is fermented with its native yeasts at a low temperature (12-14 degrees) in stainless steel tanks for approximately 30 days. This is followed by aging in steel tanks, and then bottle maturation for several months. Because perfection requires patience.
This wine has a Demeter certification. This stands for biodynamic. In biodynamic viticulture, artificial fertilizers and chemical pesticides are prohibited. People, animals, and the environment are highly valued here. Attention is also paid to the connection between the earth, animals, plants, and the climate. The position of the sun, moon, and planets is observed. The interaction between all these elements plays an important role in the preparation of this wine.
Lunaria, of course, comes from "moon," an important celestial body within the biodynamic movement.
