Tasting Note Bio Dominio Del Soto Tinto
Deep and intense ruby red color that immediately reveals the wine's power. The nose is dominated by intense aromas of forest fruits, such as blackberries and blackcurrants, complemented by soft oak notes and a hint of vanilla and spice.
On the palate, it is rich and round, with concentrated, ripe dark fruit and smoothly integrated tannins that support the fruit without overpowering it. The finish lingers, leaving a powerful but elegant impression of ripe berries and a touch of spice.
Wine & Food Pairing
This organic Tempranillo pairs beautifully with roasted or grilled red meat dishes, such as rack of lamb with Provencal herbs or a juicy entrecôte with a creamy pepper sauce. It also goes excellently with savory tapas, such as chorizo, Iberico ham, or a stew with paprika and herbs. Thanks to its round structure and rich fruit notes, it can surprisingly complement spiced dishes from Spanish cuisine, as well as aged cheeses like Manchego for a bold end to your meal.

The Dominio del Soto Tinto comes from the Ribera del Duero in Northern Spain, a region known primarily for its powerful red wines but also for producing exceptional white wines.
The Dominio del Soto estate was founded in 2005 in Sotillo de la Ribera, on high-altitude vineyards (approximately 850-900 m above sea level) with clay and calcareous soils that give the grapes a beautiful structure and freshness. The wine is produced under the creative direction of the Mathilde Chapoutier Sélection team, which aims to present the local grape in an elegant style and clearly express the terroir.
This tinto is 100% Tempranillo, a grape also known as Tinta del País or Tinto Fino in Ribera del Duero, renowned for its deep color, full flavor, and complex fruit notes.
After manual harvesting, the grapes remain in contact with the skins for a long time, extracting much color, aromas, and tannins from the skins. Subsequently, part of the wine is aged in French oak for 3–6 months, which adds subtle vanilla and spice notes, while the other part matures in stainless steel to preserve the fresh fruit characteristics. The result is a round, rich wine where ripe fruit aromas are central, supported by rich flavor notes of dark fruit and soft, integrated tannins.
