Tasting Note BIO Dominio Del Soto Reserva
The BIO Dominio del Soto Reserva has a deep ruby red color that immediately suggests concentration and power. On the nose, you'll find rich aromas of dark fruits like blackberry and black cherry, complemented by warm, complex notes of vanilla, cocoa, toast, and subtle spices from its long oak aging. On the palate, the wine is full-bodied and elegant, with a beautiful balance between juicy fruit, a refined acidic structure, and ripe, soft tannins. The finish is long, sultry, and lingering, with a combination of fruit, soft oak, and a slight spiciness.
Wine & Food Pairing
Thanks to its rich structure and concentrated flavor, this Reserva pairs excellently with dishes of character. Think of grilled or slow-roasted red meats, such as lamb chops with rosemary, a spicy beef stew, or a juicy entrecôte. It also combines beautifully with aged, hard cheeses like Manchego or a mild blue cheese, where the spicy and fruity elements enhance each other.

BIO Dominio del Soto Reserva comes from the famous wine region of Ribera del Duero in Northern Spain, an area renowned for its red wines made from Tempranillo. The Dominio del Soto winery is located in Sotillo de la Ribera, where the grapes grow on terraced vineyards at an altitude of 850–900 meters in clay, limestone, and marl-rich soils. This high-altitude terroir produces wines with concentrated fruit and bright acidity due to the large temperature differences between day and night.
For this Reserva, the grapes are hand-harvested to ensure only the best fruit is used. After selection, vinification takes place in stainless steel tanks, with controlled fermentation to preserve the intensity of the aromas. The wine then matures for 739 days in French oak, which gives it significant structure, complexity, and ripe tannins. Subsequently, the wine ages for approximately 12 months in the bottle before release, allowing it to become well-integrated, round, and balanced.
The Dominio del Soto estate was founded in 2005. The wine is produced under the creative direction of the team at Mathilde (daughter of) Chapoutier Sélection, who aim to present the local grape in an elegant style and allow the terroir to speak clearly.
Tip: Serve this wine around 16–18 °C, and if possible, decant it for 1–2 hours before serving, so the aromas can develop even better. Thanks to its structure and concentration, it can easily age for 10–15 years under good conditions, making it fantastic to keep for special moments.
