BIO Dominio del Soto Crianza comes from the renowned wine region of Ribera del Duero in Northern Spain, an area particularly praised for its red wines made from Tempranillo. The Dominio del Soto winery is located in Sotillo de la Ribera, where the grapes grow on terraced vineyards at an altitude of 850–900 meters in clay, limestone, and marl-rich soils. This high-altitude terroir produces wines with concentrated fruit and bright acidity thanks to the large temperature differences between day and night. The vineyards are organically cultivated and the grapes are hand-harvested, contributing to a pure expression of the land and the grape in the wine.
After a long maceration period of 4–6 weeks, the grapes are in contact with the skins to achieve that intensity. Fermentation and maceration take place in concrete tanks to preserve the fruit, after which the wine ages for approximately 12 months in French oak barrels. This provides extra complexity and balance between fruit, oak notes, and structure, while the organic approach emphasizes the purity of the grape.
The Dominio del Soto estate was founded in 2005. The wine is produced under the creative direction of the Mathilde Chapoutier Sélection team, which aims to present the local grape in an elegant style and allow the terroir to speak clearly.
Tip: Serve this wine around 16–18 °C, and if possible, decant it for 1–2 hours before serving, so that the aromas can open up even better. Thanks to its structure and concentration, it can easily age for 10–15 years under good conditions, making it fantastic to keep for special moments.
