The oak aging remains discreet, allowing the pure character of the wine to fully express itself.

BIO-DEM Eymann Gönnheimer Spätburgunder is delicious with poultry such as duck or chicken, combines effortlessly with veal or rack of lamb, and is a surprise with a piece of grilled tuna. Creamy cheeses or a soft Brie also allow its elegant side to shine. Serve it lightly chilled, around 16 °C, for optimal freshness and finesse.

The Eymann Gönnheimer Spätburgunder is an elegant and pure expression of Pinot Noir from the heart of the German Pfalz. Originating from the biodynamic vineyards of Weingut Eymann in Gönnheim, certified by the Demeter label since 2006, this wine perfectly reflects the philosophy of the house: respect for nature, minimal intervention, and maximum expression of terroir.

The grapes grow on calcareous loess soils, which provide tension, finesse, and subtle minerality. After a careful manual harvest, the wine ferments largely spontaneously, partly in wood and partly in stainless steel. This results in a wine with pure fruit notes, vibrant freshness, and a silky-smooth structure.
