Tasting Notes BIO-DEM B.R.O.T. Blanc Inicial
Intense and elegant bouquet with notes of citrus, apple, pineapple, bay leaf and mineral accents make it very enjoyable. The palate offers excellent freshness, beautifully balanced with clean fruit notes and a clear saline finish.
Wine & Food Pairing
Perfect wine with fresh young cheeses, salads and shellfish. Try it with steamed mussels with added fresh bay leaf.
Additional Information
B.R.O.T. sounds German, but it is truly Spanish! The blend results in a wide array of aromas, but the constant is the refreshing minerality.
Biodynamica per la Recuperacio de l’Origen i el Terroir, or B.R.O.T., means biodynamic practices to restore the authenticity of the region. Add to that a nocturnal harvest to preserve the freshness of the grapes (Xarel-lo, Macabeo and Riesling!) and you get a fantastic, honest, fresh, and clean wine. And all of this from the warm Penedès in Spain.
Spontaneous fermentation with wild yeasts from the grapes themselves in stainless steel tanks, 6 months of aging on the lees, and minimal intervention.
