Tasting Notes BIO 3 Passo Rosso
Characteristic Southern Italian style: ripe, sultry, aromas of dried fruit, ripe cherries, plums, blackberries, tobacco and a hint of mocha. The Bio 3 Passo Rosso is deep red with garnet tones, intense and mature fruit, with hints of oak. It is rich and has overripe fruit, with soft oak hints. Lots of concentration on the palate. Taste the sun!

A tasty combination with southern and winter meat dishes such as venison stew, pumpkin stew, beef stews, but also a vegetarian melanzane con parmigiana.
Additional information
3 Passo means 3 steps and is created in a special way. The first step is to manually select the best organic grapes. Secondly, partly overripe grapes are used. Thirdly, the grapes undergo an extra long skin maceration. Finally, the wine also matures for several months in wooden barrels.
This organic 3 Passo consists of a combination of Sangiovese, Negroamaro and Primitivo grapes and comes from the magical Puglia, the heel of Italy.
The bond between the earth (terra) and the Cielo family originated in the Valle del Chiampo in 1908, specifically on the Casa Defra estate, around the modest Cielo family vineyard. Giovanni Cielo's newly established family activity immediately began to bear fruit.
Since Luca and Pierpaolo Cielo (4th generation) took over the reins, the Cielo family business has been strengthened by the union of tradition and the experience of more than 2,000 wine producers from the Colli Berici. Cielo e Terra has achieved its mission.
