Tasting Notes BIO 3 Passo Bianco
The aroma presents notes of roasted hazelnuts, ripe stone fruit, honey, and wildflowers. It offers a pleasant, almost creamy mouthfeel, yet it is soft and refined throughout the palate, quickly followed by the aromatic fruitiness and florality of the Fiano. The finish is crisp and fresh.
Wine & Food Pairing
A delightful pairing with softer cheeses, but also excellent with appetizers featuring fatty fish (eel, trout, mackerel, salmon), or how about a Vitello Tonnato? It's also a great wine to simply enjoy on its own!
Additional Information
3 Passo, meaning 3 steps, is produced in a unique way. The first step involves manually selecting the best organic grapes. Secondly, partly overripe grapes are used. Thirdly, the grapes undergo an extra-long skin maceration. Finally, the wine is aged for several months in wooden barrels.
This organic 3 Passo is a combination of Chardonnay and Fiano grapes and comes from the magical Apulia, the heel of Italy.
The special bond between the earth (terra) and the Cielo family began in the Valle del Chiampo in 1908, specifically on the Casa Defra estate, around the modest Cielo family vineyard. Giovanni Cielo's newly established family activity immediately began to bear fruit.
Since Luca and Pierpaolo Cielo (4th generation) took the reins, the Cielo family business has been strengthened by the union of tradition and the experience of over 2,000 wine producers from the Colli Berici. Cielo e Terra has achieved its mission.
