Tasting Note Pouilly-Fumé "Kimeride"
Pale gold in color with a sparkling sheen. The nose is extremely complex and pure, with layered aromas of gooseberry, white peach, lime, and passion fruit, accompanied by the characteristic flinty mineral touch. On the palate, it shows a fantastic balance between juicy citrus, ripe stone fruit, and a taut, flinty acidity. The finish is remarkably long, smoky, dry, and elegantly chalky.
Food Pairing
Due to its smoky minerality and fresh acidity, this is a classic gastronomic white wine. It is at its best with oysters, fresh seafood, grilled sea bass, and swordfish. It is also a dream match for French classics such as veal in white sauce (blanquette de veau), chicken dishes with chervil, and, naturally, ripe goat cheeses from the Loire like Crottin de Chavignol.
Other Information
Domaine Jean Pabiot et Fils (Domaine des Fines Caillottes) is a well-established name in the French Loire Valley, located in Pouilly-sur-Loire. The fifth generation of the Pabiot family is now at the helm of over 30 hectares of vineyards. The estate practices sustainable viticulture according to Terra Vitis certification and is known for its precision and respect for the diversity of local soil types.
The name "Kiméride" refers directly to the unique Kimmeridgian soil (a lime-rich marl soil with fossilized oyster shells) upon which the old Sauvignon Blanc vines are planted. The grapes are hand-picked and undergo a short period of skin maceration. After temperature-controlled fermentation in stainless steel tanks, the wine matures for 6 to 8 months on its fine lees (sur lies) with regular bâtonnage, which provides extra creaminess and depth without the use of oak.
Wine Scores/Awards
- James Suckling: Regularly awarded 91+ points
- Concours Général Agricole de Paris & Concours des Vinalies: Multi-award winner of the Gold Medal
- Guide Hachette des Vins: Rated with 2 stars (outstanding quality)
Fun Fact
The name "Kiméride" is not just a fantasy name, but a tribute to a soil layer that formed over 150 million years ago when the Loire Valley was still a tropical sea! The fossilized shells in this Kimmeridgian limestone soil give the wine that unique, flinty, smoky flavor.
