Tasting note BIO Santa Tresa Cerasuolo di Vittoria Classico
Rich dark cherries on the nose and palate, along with hints of dried herbs and lightly toasted oak. Silky mouthfeel, fine-grained tannins and a small twist of milk chocolate on the finish.
The organic Nero d’Avola and Frappato grapes together provide an elegant yet robust structure with plenty of sunny red fruit. Dark red with a bouquet consisting of dark, ripe berries. Soft taste, with well-rounded fruit reminiscent of blackberries and plums. It is an elegant wine, with a certain finesse and a nice long finish. This wine has just that extra bit of complexity.
Wine & Food
Cerasuolo di Vittoria Classico from Santa Tresa is the ideal pairing for the local Sicilian dish Pasta alla Norma. This consists of a tomato sauce with aubergines fried in olive oil, mixed with some ricotta cheese. Served lightly chilled, this Cerasuolo is also delicious with meaty fish such as tuna and swordfish.
Other information
Cerasuolo di Vittoria is, to date, the only and unique DOCG in Sicily. It is a testament to the high-quality wine produced here.
The old vineyard of Feudo di Santa Tresa covers 50 hectares and grapes have been grown here for winemaking since 1697. The estate is located in Vittoria in southeastern Sicily and has 50 hectares of vineyards, largely on "Terra Rossa" soil. A special soil consisting of a layer of red loam, with a thick layer of limestone underneath. The thick limestone layer acts like a sponge, storing water so that the vines receive sufficient moisture even in the dry, hot summer.
By working with the right grape varieties and a density of 5,000-5,500 vines per hectare, the pruning techniques are simple but well-controlled. Additionally, the cool southern sea breeze compensates for the heat from the interior.
Stefano and Marina Girelli and their business partner Massimo Maggio took over the estate with the aim of restoring it to its former glory in harmony with the native flora and fauna.
The grapes from the Santa Tresa estate have been grown organically for many years, and the wine is also vegan. This means, among other things, no use of pesticides or chemicals. In 2006, the decision was made to have this officially registered. Since the 2009 harvest, the wine has been officially certified as organic wine.
