Tasting Notes BIO Santa Tresa Cerasuolo di Vittoria Classico
Rich dark cherries on the nose and palate, along with hints of dried herbs and lightly toasted oak. Silky mouthfeel, fine-grained tannins, and a small twist of milk chocolate at the finish.
The organic Nero d’Avola and Frappatto grapes combine to create an elegant yet robust structure with plenty of sunny red fruit. Dark red with a bouquet of dark, ripe berries. Smooth taste, with well-rounded fruit reminiscent of blackberries and plums. It is an elegant wine, with a certain finesse and a beautiful long finish. This wine has that extra complexity.
Wine & Food
Cerasuolo di Vittoria Classico from Santa Tresa is the ideal pairing with the local Sicilian dish Pasta alla Norma. This is a tomato sauce, with aubergines fried in olive oil, mixed with some ricotta cheese. Slightly chilled, this Cerasuolo is also delicious with meaty fish such as tuna and swordfish.

Cerasuolo di Vittoria is, to date, the only and unique DOCG in Sicily. It is a confirmation of the high-quality wine produced here.
The old vineyard of Feudo di Santa Tresa spans 50 hectares, and grapes have been cultivated here for winemaking since 1697. The estate is located in Vittoria in southeastern Sicily and has 50 hectares of vineyards, largely on a "Terra Rossa" soil. This special soil consists of a layer of red loam, beneath which lies a thick layer of limestone. The thick limestone layer acts as a sponge and stores water, ensuring that the grapevines receive sufficient moisture even in the dry, hot summer.
By working with the right grape varieties and a density of 5,000-5,500 vines per hectare, pruning techniques are simple yet well-controlled. Additionally, the cool southern sea breeze compensates for the inland heat.
Stefano and Marina Girelli and their business partner Massimo Maggio have taken over the estate with the goal of restoring it to its original glory in harmony with the indigenous flora and fauna.
The grapes from the Santa Tresa estate have been organically grown for years and are also vegan. This means, among other things, no use of pesticides or chemicals. In 2006, it was decided to officially register this. Since the 2009 harvest, the wine has been officially certified as organic.
