Organic farming has been practiced since 1990, and the process has been biodynamic since 2004.\u003cbr\u003e\u003cbr\u003eAfter careful selection of the grapes in the winery, the Wittmann Riesling Trocken is gently pressed, and the must is vinified with indigenous yeasts in large, used wooden barrels.\u003c\/p\u003e\u003cp\u003ePhilipp Wittmann (responsible for the cellar and exports), together with father Günther (vineyards) and mother Elisabeth (sales), has built a fantastic wine estate in Westhofen, Rheinhessen. They have been working organically since 1990 and later biodynamically.
