The grapes are harvested from younger vineyards, aged 10 to 25 years, spread across various plots of the estate. The differences in soil and exposure create a unique dynamic: some grapes ripen earlier than others, leading to multiple harvesting rounds to select only the very best fruit.\u003c\/p\u003e\u003cp\u003eAfter harvesting, each plot ferments separately for about 19 days, after which the wine continues to mature in stainless steel, and, depending on the vintage, a small portion in used (neutral) wood.
