Just like in Sancerre, red, white, and rosé wines can be made in this wine village under the communal name Menetou-Salon.\u003c\/p\u003e\u003cp\u003eHowever, white wine is ultimately the most produced and consumed in the wine village. According to regulations, a white wine from Menetou-Salon must always be made entirely from Sauvignon Blanc.\u003c\/p\u003e\u003cp\u003e“No good wine without generations of experience and respect for nature,” is the vision of brothers Laurent and Claude Champault. Domaine Champault dates back to the 17th century, but wine was officially made only from 1850.\u003c\/p\u003e\u003cp\u003eThe phylloxera plague thwarted efforts and destroyed all vineyards. It took until the early 20th century before Louis Champault began replanting the 2 hectares of vineyards and gradually expanding the winery.\u003c\/p\u003e\u003cp\u003eToday, the 5th generation, brothers Claude and Laurent, are at the helm. Together they manage the now 22-hectare estate in the hamlet of Champtin, just southwest of Sancerre. The vineyards are located in the Sancerre and Menetou-Salon appellations.\u003c\/p\u003e\u003cp\u003eThe soil consists of calcareous clay on steep slopes and a soil with a layer of brown sand with a large amount of chalk pebbles. The vineyards are cultivated as naturally as possible.\u003c\/p\u003e\u003cp\u003eThe grapevines are naturally protected against harmful insects and diseases.
