Chardonnay, Sauvignon Blanc, Nascetta, and Riesling are harvested together and then processed jointly. \u003c\/p\u003e\u003cp\u003eThe grapes are gently pressed as whole bunches, with as little skin contact as possible. This is followed by a slow fermentation at a low temperature.
