The vineyard benefits from cooling conditions and mist from False Bay.\u003c\/p\u003e\u003cp\u003eThe wine is only made in years when the grapes develop sufficient botrytis (noble rot). This noble rot causes the grapes to lose moisture, concentrating their sugars, acids, and aromas significantly. The grapes are harvested very late and carefully by hand, then pressed extremely slowly. According to Jordan, pressing can sometimes take an entire day.
