After destemming, the grapes are first cooled for a cold maceration of 3 to 4 days at 10–12 °C. This is followed by alcoholic fermentation at approximately 22–24 °C for 8–10 days.\u003c\/p\u003e\u003cp\u003eThis combination is intended to preserve as many aromas from the grape as possible while simultaneously obtaining soft tannins and structure.
