Another portion is dried for some time to achieve a more concentrated, slightly sweeter taste (the appassimento or ripasso method). “Siccari” therefore means “dried” or “left to dry”. Only then are these grapes also fermented, and the two parts are brought together. Finally, the wine matures in 3000-liter Slovenian oak barrels. The result is a concentrated, ripe, and sultry red wine with notes of: red berries, herbs, coffee, chocolate.
